“Healthy” Banana Pudding

2 ripe bananas, mashed
2 c | 475 ml unsweetened almond milk
1/4 c | 60 g cornstarch
1/4 c | 60 ml maple syrup
1 tsp | 5 ml vanilla extract
Pinch of salt
1 c | 90 g Nilla or off brand vanilla wafers, crushed
Additional Nilla or off brand wafers for topping

In a medium saucepan, whisk together the almond milk, cornstarch, maple syrup, vanilla extract, and salt until well combined.

Heat the mixture over medium heat, stirring constantly, until it thickens and comes to a boil, about 5-7 minutes.

Remove the saucepan from heat and stir in the mashed bananas until well combined.

Place a layer of crushed Nilla wafers at the bottom of a serving dish or individual jars. Pour half of the banana pudding mixture on top of the Nilla wafers.

Repeat the layering process with another layer of crushed Nilla wafers and the remaining pudding mixture.

Top with additional Nilla wafers and refrigerate for at least 2 hours, or until set.
