2 c Almond Flour
4 tbsp Golden Flax Meal
2 tsp Baking Powder
2 tsp Xanthan Gum
1/2 tsp Sea Salt
3 tbsp Monk Fruit Sugar
4 Eggs, separated
2/3 c Yogurt, Unsweetened, Full Fat (like Fage 5%)
1 tbsp Bragg Apple Cider Vinegar
4 tbsp Avocado Oil
2 tbsp Water
Instructions:
1. Preheat over to 300°F
2. Mix dry ingredients together and set aside.
3. Separate eggs and set aside.
4. Whisk together remaining wet ingredients, adding Eggs Yolks, and set aside.
5. Slowly add wet ingredients to dry ingredients mixture until well combined.
6. Whisk Egg Whites until stiff peaks form.
7. Gently fold whisked Egg Whites to the combined ingredients in steps. The goal here is to lighten up the mixture.
8. Drop on sheet pan lined with parchment or silicon baking mat a heaping tablespoon or similar sized portion scoop at a time to create ten biscuits. *If you want them to look smoother or more symmetrical use damp fingers to smooth and shape.
9. Bake for 28-30 minutes.
10. Cool on baking rack. Once cooled store in an airtight container.
